S16C3 You Can Eat That? Foraging for Edible & Medicinal Plants from the Backyard to the Back

Description: This class will focus on plants that are edible or have certain medicinal properties in our area ranging from ornamental plants to native plants to common weeds. Learn how to recognize, harvest, and prepare foods and medicines from plants such as wintergreen berries, dandelion leaves, chickweed plants, Jerusalem Artichoke tubers, hosta shoots, rose hips, dahlia tubers, thyme leaves, serviceberries and chestnuts. Many of these plants are readily found in the woods, fields and yards around us. We will be taking field trips to the JMU Arboretum, Bridgewater College Campus, Reddish Knob, Hillandale Park, and Edible Landscaping in Afton, Virginia. Bring note books/cameras to record the class and bring water/snacks and good walking shoes. Please dress accordingly for the weather. If there is extremely bad weather we will meet in the classroom for in-class activities.
